The following establishments received observations during state health inspections last month:

Firehouse Subs
1240 Old Morrilton Highway in Conway

Observed hand washing sink in the back to not have paper towels. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and warewashing areas. Person in charge replaced paper towels. Corrected on site.

Observed utensils being stored in the hand washing sink in the back and also observed employee empty the sanitizing solution buckets in the hand washing sink in the front. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Person in charge moved utensils out of the hand washing sink and will make sure that hand washing sinks are for hand washing only. Corrected on site.

Quat sanitizer pump did not seem to be working properly, sanitizing solution was coming out at a very low level (less than 200PPM). Quat sanitizing solution levels shall be between 200PPM-400PPM. Person in charge cleaned the pump and the sanitizing solution was at 200PPM. Person in charge also called company to come out and take a look at the pump. Corrected on site.

Observed chemicals being stored over bags of food items in the back. All chemicals shall be stored below or separate from food items. Person in charge moved the chemicals below the food items. Corrected on site.

Observed can opener to have a small amount of food debris on the blade. All food contact surfaces shall be clean and sanitized at all times. Employee cleaned the can opener. Corrected on site.

JJ’s Grill
1010 Main St. Suite A in Conway

Observed employee cutting bread without gloves. No bare hand contact with exposed, ready-to-eat food or ice. Use gloves, spatulas, tongs, deli tissue or other dispensing equipment. Employee disposed of the bread. Corrected on site.

Observation: Observed employee drinks over food items in the kitchen. Corrective Action:Discontinue use of unapproved beverage containers in food preparation or warewashing area. Person in charge disposed of all employee drinks. Corrected on site.

1010 Main St. Suite C in Conway

Observed raw shelled eggs being stored above cooked meats in the walk in cooler. All raw shelled eggs shall be stored below cooked meats. Person in charge moved raw shelled eggs to the bottom shelf. Corrected on site.

220 East Oak St. in Conway

Observed an employee dumping a drink in the hand washing sink. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Person in charge talked to employees about hand washing sinks are for hand washing only. Corrected on site.

Waffle House
816 East Oak St. in Conway

Observed hand washing sink in the back to not be working properly. All hand washing sinks shall be maintained and in good working order, and provide water at a temperature of at least 100 degrees F. Maintenance repaired the sink at the time of inspection. Corrected on site.

Observed refrigerator in the prep area to be out. Refrigerators shall be maintained and in good working repair to hold food at 41 degrees or less. Person in charge was aware of the refrigerator being out and had already moved the food items out except for some half and half. the half and half was disposed of. Maintenance started working on it at time of inspection. Corrected on site.

Hand washing sink in the kitchen did not have paper towels at time of inspection. Cold holding unit used by the servers had food items at 52 degrees F. All foods requiring refrigeration shall be held at 41 degrees F or less. All food items above 41 degrees F were disposed of. Corrected on site. Observed a reach in cooler in the kitchen to not be working properly, food items were at 55 degrees F. All cold holding units shall hold food items at 41 degrees F or less. All food items above 41 degrees F were disposed of. Corrected on site.

Observed a bag of raw bacon being stored above ready to eat food items in the walk in cooler. All raw bacon shall be stored below ready to eat food items. Person in charge moved bacon to the bottom shelf. Corrected on site
